Jeremy Smith and CJ Davidson both acting as Owner and Chef, both raised in Florida. Smith and Davidson met in college at Florida State University and instantly connected over their love for music, both playing the saxophone.

After college, both Poboys moved to Denver where they were able to reconnect over their love for French-Cajun cuisine. After successfully opening three restaurants in the Denver area, Davidson knew what would be next on the agenda - opening his own.

Poboys will feature SEVEN main Poboys with a rotating special and other traditional Creole cuisines such as étouffée and jambalaya. Focusing heavily on keeping flavors as traditional as possible, while also delivering a taste of local freshness, french bread and andouille sausage will be brought in daily from a local baker and butcher and crawfish and gator will be flash frozen at peak freshness and flown in.

At Poboys Colorado, there will be something for everyone to help them discover and fall in love with traditional Creole cuisine straight from the Louisiana Bayou. We expect Poboys to open in February of 2026.

Poboys Colorado was built on friendship, a shared passion for food, and a love for authentic Creole cooking. Owners and chefs Jeremy Smith and CJ Davidson first met while studying at Florida State University, where music brought them together and a passion for great food kept them connected. After opening successful restaurants in Denver, they set out to create a place dedicated to the bold flavors of Louisiana. Using traditional recipes, fresh local ingredients, and authentic products sourced from Louisiana, Poboys Colorado brings the spirit of the Bayou to every sandwich, bowl, and plate.
